Hummus Flatbreads

This is ridiculously easy and always goes down a storm in our house. Within 15 minutes you will have made homemade hummus AND homemade flatbreads! I even serve this at dinner parties because it is a bit of a crowd pleaser as an appetiser, snack or picky meal. Right so this is what you need:

INGREDIENTS:

1/2 mug of plain flour

2 tbsp of softened butter

1/2 a mug of chickpeas

1 wedge of lemon

1 tbsp of plain yoghurt

METHOD:

Turn the oven to 200 degrees.

Add the butter to the flour and squeeze between your fingers until it develops into a crumble mixture. Add 1 tbsp of cold water and knead until it is a hard dough texture (add more water if necessary).

Split the dough into golf ball sized balls and roll until you have flat disks about 5mm thick.

Fry the flatbreads in a dry pan on a high heat for 1 minute each side (watch them like a hawk so they don’t burn). Then turn them onto a tray covered with greaseproof paper and bake them for 10 minutes.

Meanwhile, mash the chickpeas with the yoghurt and lemon to make the hummus. If you have a food processor then you can blend the mixture instead.

Take the flatbreads out of the oven, leave them to cool for a couple of minutes and serve them with the hummus for dipping!
