OK, yes I am suggesting putting weetabix in a soup but seriously don’t knock it until you’ve tried it! Harry loves this and it takes between 10-15 minutes from start to finish so it really is a good one for a quick, healthy lunch.

The croutons are probably the best bit!
INGREDIENTS:
1 tomato
1 clove of garlic
1 weetabix
1 handful of grated cheese
1 slice of bread
METHOD:
Chop the tomato and garlic clove up small and add to a small saucepan on a high heat, stirring constantly, cook for 3 minutes on a high heat.
Add 1 mug of boiling water, stir and add the lid. Leave for 5 minutes.
Add the weetabix and mix it in, turn the heat down to low, put the lid on and leave to simmer 5 minutes.
Whilst the soup is thickening, chop the bread into little squares and fry with a tbsp of oil on a high heat in a frying pan for 5 minutes or until gold and crispy.
Pour the soup into the bowl, sprinkle the cheese over the top and add a handful of the croutons.
Serve!
