Beanie Bake

Now there is no way of making this dish utterly beautiful because it is basically just beans but trust me when I tell you that it is thoroughly delicious, healthy veggie fare and I’ve worked out it costs approximately 20 pence a head…

It isn’t stunning but it is good!

INGREDIENTS:

Half a tin of butter beans

1 tomato or a handful of cherry tomatoes

1 small onion

1 tbsp of pesto

1 handful of grated cheese

METHOD:

Turn the oven to 180 degrees.

Chop the tomato and onions up into small chunks, add half a tin of butter beans plus 2 tablespoons of the liquid from the bean tin. Add the pesto, mix it all up. Pour the ingredients into a baking dish and bake for 25 minutes.

Once done, spoon the beans into a bowl and sprinkle over the cheese and serve!

You can add preserved artichoke and chilli oil for an adult version 🙂
