Brunch Muffins


INGREDIENTS (for 6):
3 rashes of bacon
6 tbsp of baked beans
6 cherry tomatoes
2 eggs
1 handful of finely grated cheese

METHOD:
Turn the oven to 180 degrees.
Line 6 Yorkshire pudding trays with bacon.
Chop the tomatoes into halves and add both halves to the bacon.
Spoon over 1 tbsp of beans into each one.
Crack the eggs in a jug and whisk them, pour the egg over the top of the beans splitting them equally between each muffin.
Finally add a sprinkle of cheese to each one and pop them in the oven for 10 minutes.
After the 10 minutes, remove them and leave them a couple of minutes then gently ease them out with a tablespoon.
That’s it!

Serve!
I served these with some cucumber fingers but there’s a few leftover for a little snack later this afternoon.
