
INGREDIENTS:
1 sweet potato
Half a tin of baked beans
Half a tin of chopped tomatoes
1 rash of chopped bacon
Half a chopped pepper.

METHOD:
Turn the oven to 180 degrees and pop your sweet potato in for half an hour once it’s up to temperature.
In a saucepan, fry off the bacon for a couple of minutes in a tiny drizzle of oil on a medium heat.
Once the bacon is starting to crisp up, add the pepper and fry for a minute together.
Then add the tomatoes and beans, mix thoroughly and turn the heat down to low. Place the lid on and leave it to simmer for 15 minutes.
Once your sweet potato is cooked, spoon over the campfire stew and that’s it!

Serve!
I served it with a dollop of Greek yoghurt and a sprig of basil (which got picked out!) and it went down a treat 😊
