
INGREDIENTS:
1 bag of washed spinach
2 tsp turmeric
2 tsp of cumin
Half a chicken breast
2 chopped cloves garlic

METHOD:
Turn the oven to 180 degrees.
Melt a tbsp of butter in an oven proof casserole dish on a medium heat and add the garlic, 1 tsp of cumin and 1 tsp of turmeric.
Once the butter is melted add the spinach and stir it in the butter, add the lid for it to wilt down quicker.
In a frying pan add the remaining other teaspoons of turmeric and cumin with a little oil and brown the chicken on a high heat.
Once the chicken is browned, add it to the spinach and mix thoroughly.
Pop the pot in the oven for 20 minutes to dehydrate it slightly and cook the chicken through.
Remove it from the oven and as you can see here I spooned it over some plain basmati rice.
