
INGREDIENTS:
1 ripe avocado
1 handful of silken tofu
1 handful of chopped halloumi
20 grams of self raising flour (plus a little extra for rolling)
20 grams of low fat Greek yoghurt

METHOD:
To make the flat bread, combine the flour and yoghurt and mix until it forms a dough. Use the extra flour to sprinkle over a surface and using a rolling pin, roll out the dough into a rough circle.
In a mixing bowl mash your avocado and tofu together to form a creamy green dip (you can substitute the tofu for 2 tbsp of plain yoghurt).
Chop your halloumi up into little cubes.
Heat up a frying pan on a high heat with a small drizzle of oil. Fry off the halloumi until it turns golden and set it aside.
In the same pan add your flatbread and once it starts to ‘puff up’, flip it over. This should take a couple of minutes on each side.
Pop your flatbread down, spoon over your avocado and sprinkle the halloumi over the top.

I added some black sesame seeds for decoration but you don’t need to.
Also I’ve named this Harry’s flatbread because Harry is my little boy and he’s the reason I created this page.
