
INGREDIENTS:
1 handful of beef or quorn mince
3 tbsp of tomato purée
Half a courgette
1 handful of chopped pepper
1 mug of pasta

METHOD:
Grate the courgette and chop the pepper into little chunks.
In a saucepan, add the mince with a teaspoon of oil and fry it off for 5 minutes on a high heat until it is starting to brown.
Once it is browned, add the tomato purée, pepper and courgette, plus half a mug of water and turn the heat down to medium, leave to simmer for 15 minutes – stirring occasionally.
Meanwhile, cook the pasta in salted boiling water for 12 mins. Once cooked, drain it and put in into a bowl. Pour over the bolognaise and add a sprinkling of cheese (in this case Parmesan). And your done!
