
INGREDIENTS:
Half a white onion
Half a mug of arborio rice
Half a pint of veggie stock
Half a finely grated courgette
1 handful of frozen peas

METHOD:
Melt a knob of butter in a saucepan on a low heat. Once the butter is melted, chop the onion and add it to the butter.
Don’t let the onion brown, you just want to soften it.
Once the onion is softened, add the rice and toast it gently.
Once you can hear it pop slightly and you can smell toasted rice, add the veggie stock.
Stir the rice every couple of minutes to stop it from sticking. If you see the bottom of the pan when you make a line with the pan for a couple of seconds, add a couple of tbsp of cold water.
Then add your grated courgette and mix thoroughly. Once the courgette starts to turn from white to ‘off white’ add the frozen peas.
Once the peas are cooked, turn the heat off and your finished.

A certain little person asked for more of this which made me nearly fall over!!! This could be vegan and lactose free if you used oil instead of butter and it’s also GF 👍
