INGREDIENTS:
1 handful of cooked/leftover potatoes
1 handful of grated carrot
1 handful of chopped broccoli
1 rash of bacon

METHOD:
Fry off the bacon until it start to crisp up in a frying pan on a medium heat.
Chop the cooked potato and add it to the pan.
Fry the potato for a couple of minutes, add a couple of tbsp of cold water to help it break down if necessary and crush them with a masher.
Add the carrot and broccolli and mix until the potato is broken up into a lumpy mash.
Squash the whole lot down with a potato masher and turn the heat down to low.
Leave it to crisp up on the bottom for 10 minutes.
After which, turn off the heat and leave it for a few minutes.
Then turn the whole lot onto a plate (I spooned the mixture into a mug and turned it out onto Harry’s plate)

Serve!
I added some avo and almonds and Harry ate the lot! You can substitute the broccoli and carrot for virtually any leftover veg. It’s a great ā€˜using up bits and bobs’ meal and very easy.
