
Purple Flatbread

INGREDIENTS:
1 boiled beetroot
1 handful of beef mince
1 tsp of pesto
30 grams of self raising flour
30 grams of plain yoghurt (plus an extra tbsp for the dip)

METHOD:
Combine the 30 grams of flour and 30 grams of yoghurt and mix to form a dough.
Roll the dough out on a floured board to form a circle(ish) and fry it either side in a hot frying Ian with a drizzle of oil until it puffs up. Then set aside.
Add the beef mince to the same hot pan and once crispy, chop the beetroot and add it to the beef.
Fry together until it starts to dry out and then add a few tbsp of cold water and leave to simmer for a few mins.
Combine the extra tbsp of yoghurt and the pesto to form a dip.
Spread the pesto yoghurt over the flatbread and sprinkle over the beetroot and beef.
That’s it!
