INGREDIENTS:
1 sweet potato
1 parsnip
1 carrot
Half a mug of arborio rice
1 tbsp of cream cheese
.
METHOD:
Peel and finely grate the veg.
Add a tbsp of butter to a saucepan and melt it on a medium heat.
Once melted, add the rice and toast for a couple of minutes.
Then add the veg plus 1 mug of boiling water.
Pop the lid on, turn it down to low and leave for 20 minutes.
Once cooked, remove the lid and add the cream cheese.
Stir it in and that’s it.

Serve!
This doesn’t look much but it tastes like cheesy mashed potato and contains 3 portions of veg 😊
