Summer Risotto

INGREDIENTS (for 2 portions):
1 mug of arborio rice
Half a stock cube
Half a tin of chopped toms
1 handful of cherry toms
Half a chopped pepper

METHOD:
Add the rice to a saucepan with melted butter on a medium heat.
Toast the rice for a few minutes until you can smell it & it starts to pop slightly.
Then mix your stock cube with a mug of boiling water & add it to the rice.
Add the tinned tomatoes & chopped pepper.
Turn the heat down to low & add the chopped tomatoes.
Pop the lid on and leave it to simmer for 20 minutes.
Remove the lid, stir it to let out the steam & stop the rice overcooking.
That’s it!
