
Refried Beans Jacket

INGREDIENTS:
1 sweet potato
Half an avocado
Half a tin of drained black beans
1 tsp of smoked paprika
2 cherry toms

METHOD:
Turn the oven to 200.
Pop the sweet potato on a tray and bake until soft (plunge a knife into it to see).
In a saucepan, melt a knob of butter or oil and then add the beans and the smoked paprika.
Once it dries out, add a few tbsp of cold water.
Mash slightly and then allow them to cook and dry out again.
Once dry, set them aside.
Chop or mash the avocado.
Chop the tomato into chunks.
Once the sweet potato is cooked, halve it and spoon over the beans. Then sprinkle over the avocado and tomatoes.
That’s it.

Serve!
If you don’t have black beans, you can use kidney beans instead. This can also be adapted for babies by mashing the sweet potato and avocado instead.
