
Sunshine Flatbread

INGREDIENTS:
30 grams of self raising flour
30 grams of low fat yoghurt
1 handful of cherry tomatoes
2 handfuls of cauliflower
1 tsp of turmeric

METHOD:
Chop the cauliflower into small chunks and add to a pan with the turmeric. Boil until soft.
Combine the flour and yoghurt to form a dough.
Roll the dough out on a floured board to make a circle(ish).
Add the flatbread to a hot frying pan with a glug of oil.
Fry until it starts to ‘puff up’ and then flip it over. Cook for a couple of minutes and then pop it on some kitchen paper to soak up any extra oil.
Once the cauli is soft, drain it and mash (you can mash with butter, yoghurt, oil or cream cheese (as I have).
Add your tomatoes to the frying pan and cook until soft.
Finally, spoon your cauli mash over the flatbread and sprinkle the tomatoes over the top chopped or whole.
That’s it!

I always get asked why I use low fat yoghurt for this, it’s because high fat yoghurt tends to burn the bread when you cook it 😊 I also sprinkled some chopped chives over the top for decoration and Harry loved it!
