
INGREDIENTS:
1 bag of spinach
3 tbsp of tomato purée
1 tin of chopped carrots
2 capfuls of apple cider vinegar
1 avocado

METHOD:
In a large microwaveable bowl, add the entire bag of spinach plus 3 tbsp of cold water.
Pop cling film over the top and microwave it for 5 minutes.
In a blender, add the drained carrots, the tomato purée and the vinegar and using tongs (to reduce excess water) add the spinach.
Blitz until smooth.
Then peel and destone your avocado and add it the blender and blitz once more. You can add a little olive oil to thicken it but you don’t have to.
That’s it.

Serve!
This is a great way of getting serious amounts of extra goodness onto a plate and is lovely with some soft veggie fingers or toasted pita bread slices.
